E m 13 de setembro de 1649, os portugueses, através de uma Carta Real, proibiram a fabricação e venda da cachaça em todo o território brasileiro. 12 anos depois, os proprietários de cana-de-açúcar e alambiques, indignados com as constantes cobranças de impostos ao longo dos anos e perseguidos por vender a bebida, se revoltam no dia 13 de setembro de 1661 e tomam o poder no Rio de Janeiro por cinco meses, resultando em um dos primeiros movimentos de insurreição nacional conhecido como a Revolta da Cachaça. Assim, o dia 13 de setembro celebra o “Dia Nacional da Cachaça” como uma forma de relembrarmos os tempos de um Brasil colonial, quando o destilado era símbolo de resistência contra a dominação portuguesa.

De acordo com Carlos Lima, diretor executivo do Instituto Brasileiro da Cachaça (IBRAC), a versatilidade da bebida na coquetelaria vem se mostrando igual a de destilados de qualidade como vodca, gin ou rum. Vários bartenders a utilizam para reinventar drinks famosos, tais como o Mojito, Dry Martini e a Margarita.

“Considerando a diversidade regional de produção, com opções diversas entre as bebidas não envelhecidas e envelhecidas nas inúmeras madeiras, cada uma com impactos sensoriais distintos, temos uma base extensa de experimentação de coquetéis contemporâneos, tanto no Brasil como internacionalmente. É essa quantidade de atributos que faz a Cachaça um destilado distinto dos demais, que vem conquistando espaço e angariando novos fãs no mundo todo”, enfatiza Lima.

10 ml de suco de limão
15 ml de xarope de açúcar 
1 colher de sopa de purê de goiaba
Espuma de goiabada
Queijo ralado

/ Modo de preparo

Combine a cachaça, suco de limão, xarope de açúcar e purê de goiabada na coqueteleira com gelo. Mexa vigorosamente. Sirva em uma caneca com gelo. Cubra com espuma de goiabada e finalize polvilhando queijo ralado por cima da espuma.

Como fazer purê de goiaba: bata um pedaço de goiaba sem casca no liquidificador sem água. 
Como fazer espuma de goiabada: em uma panela, coloque um pedaço de goiabada com 50 ml de água. Mexa em fogo alto até derreter a goiabada. Em seguida, diminua o fogo e deixe a mistura reduzir. Adicione o creme a um sifão ou misture com aquafaba. 
Como fazer aquafaba: deixe uma xícara de chá de grão de bico de molho por 8 horas. Troque a água e repita por mais 8 horas. Após esse período, cozinhe o grão de bico por 8 min em fogo alto. Troque a água e repita. Agora, separe o grão de bico e reserve a água do cozimento. Deixe esfriar em temperatura ambiente. Por fim, use como um emulsificador natural e vegano.

 Twist de laranja

Em copo baixo, coloque o cubo de açúcar granulado. Dê três lances de angostura e macere. Em seguida, coloque uma pedra de gelo grande e sirva a cachaça. Mexa. Finalize com um twist de laranja.

20 ml de suco de limão
25 ml de melado de cana um punhado de folhas de hortelã frescas
Água com gás para completar
Gelo quebrado

Coloque a cachaça, o suco de limão e o melado de cana em um copo alto. Macere as folhas, coloque no copo e depois encha o copo com gelo. Mexa com a colher até misturar todos os ingredientes. Complete com a água com gás e sirva em homenagem ao mojito, o drinque cubano com mais de cem anos de história.
